Artisan 810 Enlarges or offsets my images-Help

I am trying to copy a certificate that is 8.5" x 5.5" the kind with the decorative border.
I am using an Ad Hoc connection to my laptop. Windows 8. Current Epson software.
Im using white card stock 110 lbs 8.5" x 11"

When I use the copy function on the printers touch screen or when I scan the image to my computer and print it the image comes out with the edge(s) cut off and/or it is enlarged.
Sometimes the color is too dark/light.

I have followed some of the FAQs and the help that is on my computer but its not changing. Cleaned and aligned the heads etc.
Can anyone help?
I could ask this a different way: I want to be able to stick these on the glass and click copy or even scan it into my computer and print it BUT I want it to look the same or as close as possible without a lot of work.
