Epson WF7710 & Windows 11 Hell

Can anyone tell me why I have to uninstall and reinstall all my Epson WF7710 drivers in Windows 11 every single time I restart my pc in order to print or scan anything?

I have been on the Epson website every single time to download the latest drivers but still the problem persists.
