Original vs third party ink refills for Epson printer L121

My question applies to any printer ink refills.
I have Epson L121.
Original Epson (4)ink set costs around $20.
But China made or third party inks sell for much less like under $3.
There are some claimed to be Epson original and sells for $10.

Epson tells me I always need to use original.
But WHY?

Maybe there are some color variations, but will third party inks really damage the printer?
Is it worth paying lower price for third party inks?

We wrote an in depth article on just this. It is highly recommended to do your research before going down this avenue. You get what you pay for with prints. I would only recommend using genuine cartridges, but modifying them to be refilled and reset. Precision Colors and Cone Colors are the only two I would recommend.
