Problem setting double-sided printing for Epson XP-8700

I have a new Epson XP-8700 printer. I thought I had set double-sided to be the default (in printing preferences in the Settings App). But every time I now open a document (e.g. in Word) and go to Print, it says that double-sided printing is "off". How do I ensure that double-sided printing is the default?
